Quick Fish Tacos; Semi-Homemade



It is Cinco de Mayo today!!! Cinco de Mayo commemorates the victory of the Mexican regular army over the French forces at the Battle of  Puebla.  It is celebrated amongst bang-up pomp inwards this business office of the world. This was merely a argue for me to brand Tacos. Everyone inwards my dwelling work solid loves tacos; whatsoever kind! We honey vegetarian tacos, edible bean tacos, fish tacos, chicken tacos.. You mention it, nosotros similar it; except the ones amongst meat inwards it. You run across nosotros don't consume meat.





Tacos are zip but about variety of vegetarian or meat filling inwards the middle of a minor tortilla ( roti) that is normally topped amongst lettuce/shredded cabbage, onion, sour cream, taco sauce together with shredded cheese. Servings: ii ( ii per person)



Prep time: 5-10 minsCook time: 15-20 minsTotal time: 20-30 mins



Ingredients:


Corn tortillas: four (in position out )
Breaded fish stick or fish fillets: four inwards number
Greek yogurt: 1/2 loving cup ( may non withdraw all)
Chopped onion: 1/4 cup
Shredded cabbage: 1/2 cup
Taco sauce: 1/4 loving cup ( may non withdraw all)
Shredded depression fatty Mexican blend cheese: 1/2 loving cup ( may non withdraw all)
Roasted butternut squelch cubes: 1 loving cup ( may non withdraw all), ( optional)

Method:


Cook the breaded fish sticks inwards the oven or the microwave every bit per the instructions on the packet together with run on ready.




If you lot wishing to add together roasted  butternut squash(optional), roast it inwards the oven inwards a unmarried layer at 350 degrees for 30mins. Keep ready.



When the fish is cooking, finely shred /chop the cabbage/lettuce together with run on ready.

Assembling the tacos:


Warm upwardly the corn tortilla on a griddle or for 10 seconds inwards the microwave.  



Place the tortilla on the serving plate.


Apply a layer of Greek yogurt. 




Now, place one slice of cooked breaded fish. 



Top it amongst 1/2 tsp chopped onion, 1 tbsp shredded cabbage together with 1 tbsp shredded cheese.





If using roasted butternut squash, add together it to the taco earlier the cheese.


Drizzle taco sauce on top.





Do the same amongst all four tacos.

Serve
 it with guacamole , whatsoever variety of salsa,  pico de gallo or salsa verde if you lot wish. Eat immediately.
