Seafood Noodle Soup & Seafood Noodles; Thai Style.

That's what I wanted.  I took a mental inventory of my refrigerator too pantry too the best affair I could intend of was Seafood noodle soup. I had a few veggies inward the refrigerator that I needed to finish. I had some shrimp inward the refrigerator which I could use. I had chicken broth inward the pantry. Perfect. I laid upwards out making the soup every bit per Arvind Mallya's recipe too and hence every bit commons ended upwards experimenting past times adding a piddling chip of this too a piddling chip of that too the terminate resultant was a delicious Thai trend shrimp noodle soup that I ate soup trend that nighttime too the adjacent nighttime added some to a greater extent than cooked noodles, crushed peanuts too had it every bit Thai seafood noodles. Servings: 4-6


Ingredients:


Green beans:4-6, chopped fine
Carrot:1 medium sized, diced small
Cauliflower florets: 1 cup
Cabbage, chopped fine : 1 cup
Fresh babe corn: 1 cup
Onion: 1 small, chopped fine
Garlic: 2-3 pocket-size cloves, minced
Ginger: 1 inch, minced
Spring onions /scallions: 2-3, chopped fine.
Basil leaves, chopped: 2 tbsp
Cilantro leaves, chopped: 1 tbsp
Shrimp amongst head: 12-14, cleaned too marinated amongst salt, dark pepper too turmeric powder.
Egg: 1, beaten inward a bowl.
Chicken broth: 1 tin ( you lot tin also operate vegetable broth).
Tom yum soup paste: 2 tbsp
Soy sauce: iii tbsp
Oyster sauce: 1 tbsp
Hot sauce: 1 tbsp
Tomato ketchup: 1 tbsp
Sesame oil: 1 tbsp
Black pepper:1 tsp,freshly ground
Salt: every bit per taste.
Corn flour: 1 tsp, dissolved inward 1/4cup water.

Rice noodles, cooked: 2 cups
Crushed roasted peanuts: 1/4 loving cup ( for garnishing).

Method:


Heat sesame fossil oil inward a wok upon high heat. Sauté ginger, garlic, chopped onions, white business office of jump onions for a minute.


Now add together the chopped dark-green beans, babe corn, carrots, cauliflower too cabbage i later the other for a twain of minutes until slightly tender.

Add the chicken broth, Tom yum soup base, all the sauces, ketchup, salt, pepper, basil leaves too cilantro leaves. ( Reserve a piddling basil too cilantro leaves for garnish). Bring this to a overnice boil. Taste the common salt too conform accordingly. Remember the sauces are all salty, hence err on the side of caution.
Add inward the shrimp too proceed boiling until the shrimp plough pinkish ( unopen to 3-5 mins). You don't desire to overcook the shrimp. 

Add the cornflour-water mixture. Stir well.

Add the beaten egg inward such a trend that it makes a stringy formation. Let it create for a twain of minutes.



Turn off the flame.

Add cooked rice noodles to the serving bowl too ladle the hot soup on exceed of it. 


Garnish amongst jump onions, cilantro too basil leaves.
