Servings: 6-8


Ingredients:


Basmati rice: iii cups
Water : 8 cups
Chicken alongside bones : 2 lbs, cleaned, chopped into medium pieces.
Red Onions: iii medium, chopped lengthwise.
Cashew halves: 2 tbsp
Sour yogurt: 1 cup
Ginger garlic paste: 1 tbsp
Lemon juice: 1 tsp
Haldi: 1 tsp
Chilli powder: 1/2 tsp
Green chillies: 6, chopped fine.
Bay leaves: 2
Cloves:4-6
Cardamom pods: 4-6
Cinnamon stick: 2 nos
Shah jeera: 2 pods
Kalajeera: 1 tsp
Ghee: 2 tbsp ( optional)( you lot could exercise only fossil oil instead of ghee)
Coconut oil: 2 tbsp( whatever cooking fossil oil tin live on used)
Mint leaves: 1 cup, cleaned
Saffron:3-4 strands
Warm milk: 1 tbsp
Hard boiled eggs: 4, sliced into 2( optional), for garnishing.
Salt: every bit per taste.


Method:



Marinate the chicken pieces alongside a lilliputian salt, lemon juice, haldi powder, blood-red Chilli pulverisation together with continue aside for atleast thirty mins.

Fry sliced onions inward ghee-oil mixture until golden together with crispy . Drain on newspaper towels.

Fry cashew halves inward the same fossil oil together with continue aside.

Now sauté cinnamon, clove, cardamom, bay leaves, kala jeera, shahi jeera inward the same fossil oil for 1-2 mins together with continue aside.

Soak basmati rice inward H2O for thirty minutes. Drain together with allow it dry out for some other thirty mins.


Boil H2O alongside 1/2 tsp common salt . When the H2O comes to a boil, add together the basmati rice. Cook it entirely until the rice crackles( half-done, takes around 10 minutes). Drain using a colander. Keep aside.




Cook the chicken until half-cooked. Let it cool down.



Once cooled, add together to it ginger garlic paste, yogurt, salt, the fried whole spices, one-half of the fried onions together with cashew halves, greenish chillies, mint leaves. Mix well.


Soak the saffron strands inward warm milk for 10 mins. Mix this into the warm rice.

Preheat the oven to 400 deg F.

Take the chicken inward a oven-safe pot( I exercise a Dutch oven). Spread it along the entire bottom of the pot. 



Now layer the half-cooked rice on hit of this.


Cover the pot tightly alongside aluminum foil.




Close the lid together with house it inward the oven for 45minutes to 1 hour, checking inward between.



When done, garnish alongside the removing fried onions/ cashew halves together with boiled egg halves.




Mix good earlier serving.



Serve hot alongside onion raita and/or chopped onions dressed alongside lemon juice together with salt.
